If you consider yourself a picky eater, or have a picky eater at home (we’re looking at you, kiddos!) then it’s probably a constant challenge trying to disguise good-for-you foods in meals and snacks. But Katie Lee Biegel just made it so easy to pack protein into dessert time with her Strawberry Cottage Cheese Ice Cream recipe. It only has four ingredients and tastes so good that even the pickiest eater will finish an entire bowl.
“Today on #TheKitchen @foodnetwork, I am putting my lifelong love of cottage cheese to work and making Turkey Club Cottage Cheese Wraps AND Strawberry Cottage Cheese Ice Cream (cuz us 40+ girls gotta get our protein one way or another!!!),” Biegel captioned a recent Instagram post.
On the recipe page on Food Network’s website, Biegel wrote, “Cottage cheese can do everything; even act as a base for ice cream! I like the salty element that it adds to whatever sweet flavor I create.”
To make the Strawberry Cottage Cheese Ice Cream, you first want to start by simmering fresh hulled and chopped strawberries and sugar over medium-low heat until the sugar liquefies and the strawberries begin to break down. In a smaller bowl, mix a bit of cornstarch with water until dissolved and add the mixture to the strawberries to thicken the syrup. When the strawberry mix has reached the consistency of jam, take the entire thing off the heat and let it cool to room temperature.
Once cooled, blend your whole-milk cottage cheese in a food processor or high-speed blender until it’s smooth. Then, fold in your strawberry mix and transfer the entire thing to a loaf pan, cover with plastic wrap, and chill in the freezer for at least four hours. Then it will be ready for you to have a sweet treat!
“I stir in store-bought caramel and chocolate chips, or I make a strawberry syrup,” Biegel wrote in the recipe description. “My daughter has no idea it’s cottage cheese, and loves it. I find the texture is best at 4 hours, so if it’s frozen longer, let it sit on the counter for 10 to 15 minutes before serving.”
